Brief history of the Neapolitan Pizza
In 1889 the King of Italy Umbert I and the Queen Margherita spent few days in Naples. The queen was intrigued by the pizza she never tasted. the best known and renowned pizzaiuolo (pizza maker) of the time was called to the Royal Palace; he had his Pizza restaurant along Sant’Anna alleyway, a short walk away from Via Chiaia. Don Raffaele and his wife Rosa prepared a pizza with mozzarella, tomato and basil, the colours of the Italian flag, which thrilled in particular the Queen Margherita. Don Raffaele dedicated his great dish to the queen and he called it “Pizza Margherita”. Since then Pizza became famous all over the world.
The main reason for this global success is its versatility: the basic recipe, simple, made of easily available ingredients such as water, flour, tomato and mozzarella, allows an infinite number of variations, adapting to different tastes and needs of all palates, from the simplest to the most refined.
